Breakfast for Supper

I know most of my posts (all of my posts?) have been about my pregnancy lately, but there is really not much to say on that front right now. I want this blog to be about whatever is going on with my family that I feel like writing about and today, I feel like talking recipes.

Breakfast for supper. That’s what I’m loving right now.

A few months ago, we had a good routine of nightly meals. We did Meatless Monday, Taco Tuesday, Wednesday didn’t have a schedule, Seafood on Thursday and Pizza on Friday. It was good because I could prepare ahead of time and there was only one day of the week where I had to come up with something original. It might sound boring to have such a routine, but I can assure you there are plenty of different recipes to try within this frame. We had shrimp tacos, potato & chorizo tacos, vegetarian tacos, shredded beef tacos, chicken tacos… enchiladas, tostadas… I actually found some really great recipes this way!

But lately, we’ve gotten out of our supper schedule and we want to get back into it. We even came up with the best idea for supper on Wednesdays – BREAKFAST. I know this is probably already a thing for some people, but we never did it and I thought it was a genius idea. You see, Andino’s band jams at our place every Wednesday and they start showing up at around 6:30 pm. It doesn’t leave me much time after work to get supper going so it has to be something I can whip up quickly. Andino recently bought me a big new electric skillet and we decided to try it out this past Wednesday for supper. We had pancakes, sausages, eggs over-easy and fruit salad. It was so yummy that we decided we should make it a weekly thing. One of my favourite meals in Mexico is breakfast – fried bananas, refried beans, queso fresco, warm tortillas… I can’t wait to try my hand at making some Mexican breakfasts… for supper.

I love finding new recipes that are delicious and adding them to my repertoire. I hope that by getting back into my supper schedule I can find lots of new delicious recipes and of course save time trying to decide what to make!   1. We went to the beach last weekend with my father in law and he improvised crepes! He had forgotten most of the ingredients but they turned out super delish! We used pancake mix with egg/water/vanilla/lemon zest and he brought a very soupy raspberry jam from his garden….soooooo good! I cant wait to try to make it on sunday! Also I dig breakfast potatoes big time! I have been making my husband make me pancakes and sausages (veggie ones) for me every weekend, lol!

  2. I love breakfast so much I could eat it all the time. 🙂 What about huevos rancheros for a different variation? There is something about guacamole, salsa and eggs that makes a great combination.

  3. Breakfast for dinner is the best, the other day we had pancakes and it was glorious.
    But, for Mexican breakfast you should definitely try Chilaquiles: tortilla chips covered in tomate verde salsa (or salsa roja), cream, and cheese, with a side of refried beans, rice, sometimes a really thin steak.
    Or, my personal favorite: enfrijoladas… similar to enchiladas, except the sauce is made of beans, to a smooth cream, and also eaten with cream, cheese, sometimes, avocado.

  4. Making me hungry reading this. You can never eat too much Mexican food and tying it in with breakfast is in fact genius for dinner! I’m thinking a big ole breakfast burrito with eggs, peppers, onions, sausage, and cheese would do the trick for a band night. Yum! If you’re ever in a sweets mood at night, chocolate chip pancakes don’t suck either. 😉

    • My Mom loves breakfast burritos! can you believe I’ve never had chocolate chip pancakes? (That I can recall) I prefer plain and once in a blue moon with blueberries

  5. We got a waffle iron as a wedding gift and it was a life changer. I know for a lot of people they sit in the cupboard, but we do waffles every Sunday morning. You can top them with SO MUCH STUFF. I do cinnamon apples, vanilla cardamom pears, strawberries, bananas and Nutella, you name it. You can also throw a ton of stuff IN the waffles…blueberries, chocolate chips, nuts, pumpkin, banana, even cocoa powder (chocolate waffles with strawberries on top are the bomb!). Also, can I just say that when I was home visiting my family I realized that it’s really only us east coasters that say “supper”…for everyone else, it’s just dinner!
